A summa cum laude graduate from the University of Missouri-Columbia, Mimi completed a Bachelor of Journalism degree with an emphasis in magazine writing and a Bachelor of Arts degree in German, for which she graduated with additional honors. She also earned two additional certificates in digital global studies and multicultural studies.

She has interests in travel, finance, music, and languages. She previously worked at The Points Guy, where she was a social media manager. She also previously interned at Spindle magazine in London, where she wrote about emerging musicians. Additionally, she reported on civil asset forfeiture in the state of Missouri for the Pulitzer Center on Crisis Reporting and was the Travel News and Features Intern at The Points Guy
